In the peaceful countryside of Emilia-Romagna, more precisely in Correggio, where the land is covered with vineyards and culinary traditions are lovingly preserved, our family-run company “Il Canarino” is located. For three generations, we have been producing a unique dessert: grape dessert. This delicacy, created through the skilled processing of fresh grape must, is a true gastronomic treasure that brings back childhood memories, when grandmothers would prepare this exquisite sweet treat as an afternoon snack for their grandchildren.
It all began in 1969 from an idea by our parents, the Pedrazzoli couple: “To introduce people to the distinctive and genuine flavor of grape dessert.” The strength of this product has always lain in the simplicity of its raw materials: Lancellotta grape must, sugar and flour. The success of this intuition was immediately clear and, in addition to grape dessert, over the years we have also specialized in the production of “SABA”, cooked grape must with a sweet-and-sour flavor that can be used to garnish or season all dishes, both sweet and savory.

Production process
Thanks to innovation and continuous research and development, today we are able to produce up to 25,000 trays per day, meeting growing demand without compromising product quality. A fundamental aspect of our process is processing the product while it is still hot, which allows for natural pasteurization. In addition to preserving the authentic flavor of grape dessert, this method ensures a shelf life of six months without the need to add preservatives. The company has a research and development department. We are able to create new product references and develop products commissioned by other companies. We are a flexible company, capable of producing both sweet and savory products.
Inside the company there is a laboratory where analyses are carried out on raw materials and finished products, making it possible to constantly monitor the quality of our products.
